Noodles obsession


Rice noodle stir fry with peanut sauce and Portobello Mushroom Stroganoff with braised bee . Both were super good although I didn't remember all the cabbage in the rice noodle with peanut sauce.

So this is what you do at work, dad?

Kelly and Adam lay on the floor of the elevator.


At Mike's work station, Adam kept saying, "Let's meet everyone."
They wanted to go in the turn-style type door but if you keep going around it tells you that there has been a security breech.
Following the stream around the building- I'm sure Mike takes off his shoes and follows it around often.

Mary told all of Mike's coworkers that she wanted to take a bath outside.

I had to run Mike up to his office today because he rode his bike home last night and did not feel like riding back up there at 8 am. Kelly, Adam and Mary came to see what it looked like.

Alone

No one to fight with today.
A trip to the McDonald's playland.

Nana and Papa took the top 6 children to Pirates Cove today. Kenny, too young to go, stayed home with me. At the play place he was so sweet. He was reluctant to go up in the equipment. After 20 minutes, I heard his little voice yelling "WEEEEE!" I then saw him pop out of the slide. He had some fun today too.

Pasta Fresca


Mike and I went to Noodles and Co last night for our date night. I got Pasta Fresca and was craving it this morning. I googled it and had most of the ingredients except for fresh parsley and spinach. So Megan prepared the ingredients while I ran to the store. It was so yummy.

Pasta Fresca Recipe
(Inspired by Noodles & Company)

Ingredients:

Saute Ingredients:

  • 12 oz. pasta (I’d recommend mostaccoli or farfalle)
  • 2 tsp. extra virgin olive oil
  • 4 cloves garlic (either fresh or roasted), minced
  • 3-4 roma tomatoes, diced
  • half a red onion, diced (about 1 cup)
  • 1 lb. cooked shrimp (or cooked chicken, beef, seafood, tofu, etc.) **See Note Below**
  • 1 oz. baby fresh spinach
  • freshly grated parmesan

Herb & Balsamic Vinaigrette

  • 1/4 cup olive oil
  • 2 Tbsp. balsamic vinegar
  • 2 Tbsp. white wine
  • 2 Tbsp. fresh parsley, finely chopped
  • 1/2 tsp. salt

Method:

In a small bowl, whisk together vinaigrette ingredients (olive oil, balsamic, white wine, parsley and salt) until well-blended.

Meanwhile, in a large pot, boil (well-salted) water, and cook pasta al dente (just slightly chewy) according to package instructions. Drain.

In a large skillet, heat 2 tsp. olive oil over medium-high heat. Add garlic, and saute for one minute. Then add in the tomatoes, onion, cooked pasta and your protein (shrimp, meat, etc.) and continue sauteing for 5 minutes until the pasta just slightly begins to brown.

Then add in the spinach and vinaigrette, and continue stirring and sauteing for another 3-5 minutes, until the spinach begins to wilt.

Remove from heat and serve, garnished with Parmesan or feta cheese.

Dentist


Kelly had a cavity, she was a little nervous to get a filling. As Adam will atest, "It doesn't hurt." He doesn't think he has to brush his teeth because the don't hurt- I will be asking the dentist to hurt a little next time.
